No, it won't. The iPhone draws exactly the amount of power it needs.

What is the best charging procedure for battery longevity? I keep mine fairly well charged. Should I let it run way down at times, then recharge?

You can charge it any time you wish to. It's not necessary to discharge it completely on a regular basis. That will not improve the battery's life, it will recalibrate the battery meter.

I've always used an iPad charger on my iPhones and have never had any problems in the last 5 years.
