Is there an app that will stop the phone for looking for OTA's? I'd really hate to go to bed one night and the wake up to find my phone updated and un-jail broke

Either way... you iPhone won't "Automatically" update itself. Yes, when an OTA update is availalbe a notification badge will show up on the Settings icon. However, it's up to you to not hit the update button in your iPhone's settings.

Thanks guys. Yea I was afraid that it would pop up and ask at night and if I didn't respond it would automatically update.

Nope... you have to physically touch the Update button for the process to begin. :)
