To do this without jailbreaking you need to use field test mode...
Dial *3001#12345#* and hit “Call” to launch Field Test
Now if you tap the signal number it will switch back to bars. Every time you tap that area it will toggle between bars / db.
Press Home or Reboot the phone once you have them set back the way you want and it will "stick".

Ok thank you. I've never noticed until I updated to ios6. When I was jailbroken I had all different symbols in the bar. But I realized if I tap it it changes but changes back on its own. I'll try that method tho.
