If somebody hoses their iPhone, by setting the device to 01/01/1970 (Apple, iPhone and iPad News | ModMyi - '1970' date bug acknowledged by Apple, promises solution in later software update) will restoring the iPhone from DFU mode fix this, or will the phone truly be bricked?

Restoring from DFU mode will not work.
There's no guarantee that it can be restored but your best bet is to take it to an apple store. If it can be restored, they're the best ones to be able to do it.

Remove the battery and re-install it. It forces the iPhone to re-set the date..
True, but not as easy as it sounds.
