Possible to keep purchased items off phone?

Well, that's weird. That's the phone number Apple gave me when I created the case through them online.
 
Okay, the problem is solved, and I was able to figure it out without calling Apple.

Firstly, I wanted a copy of this music video on my PC, but not my phone. I copied the file from the iTunes directory into a separate folder, so I'd always have it. Next, within iTunes, I selected the music video, and deleted it. However, iCloud immediately restored the file, since it was originally purchased on iTunes. I selected the file again, and chose 'delete' one more time. This time, iTunes asked me if I wanted to "hide this video in the cloud?" I chose yes. File is now off iTunes! I synced the phone again, and the problem is solved!
