I have been beta testing iOS 11. When the final version comes out what do I need to do to get off the beta program and install iOS 11?

Remove the beta profile in Settings - General, so that you don’t receive updates to beta versions any more. It’s possible that the last beta version is identical with the official iOS 11 software. If it is, you don’t have to update. If it is different, just update your device, as usual, when iOS 11 is available.

Thanks. That worked on my iPhone but my iPad Pro doesn’t have profiles in settings.

Is your iPad Pro updated to iOS 11?

Yes.

You can't install beta software without the profile installed. Maybe it was installed before, and you've already removed it.
