can i rollback from a backup?

so i just pressed back up on my itunes for my new iphone 4s from my old 3gs, which was fine BUT IT DELETED ALL MY NEW STUFF

NEW TEXTS, NEW PICS, etc


please tell me i can restore it how it was, id rather have my new stuff on it then my old stuff.
