Can you set up a password for certain apps to be use each time you access the app?

You cannot password protect apps on a stock iPhone, but if you choose to jailbreak, and depending on what device and version of IOS you have installed, there are several options for protecting apps in this way, such as LockDownPro (although I don't think that is 5.1.1 compatible yet).

I use applocker and I find it very effective!
